Game-time Chicken Wings Recipe Using the Traeger Timberline & Goldens' Cast Iron Cooker

WHAT HEATH USED IN THIS RECIPE:

INGREDIENTS:

DIRECTIONS:

  1. Brine wings overnight, use 1/4 cup of Heath Riles BBQ Chicken Injection & Brine mixed with 16 oz of Chicken Stock
  2. Get Traeger up to temp, we used Royal Oak 100% Charcoal Hardwood Pellets and cooked at 300º.
  3. Dry wings well and place them on a rack if you wish.
  4. Spray wings with Duck Fat Spray
  5. Season wings with Heath Riles BBQ Chicken Rub and then Heath Riles BBQ Cajun Creole Garlic Butter Rub.
  6. Flip wings and repeat steps 3-4 on other side.
  7. Put wings on the Traeger Grill for approximately 1 hour or until the internal temperature is 190º-195º.
  8. Mix a 50/50 blend of Heath Riles BBQ Sweet BBQ Sauce and Heath Riles BBQ Tangy Vinegar BBQ Sauce, we used approximately 1/4 cup of each sauce.
  9. Toss wings in sauce mixture.
  10. We then placed the wings on our Goldens' Cast Iron Cooker to get some char. We flipped them often to get equal char on both sides for a total of about 10 minutes.
