BBQ Bologna Sandwich with Tangy Mustard Slaw combines smoky, char-grilled bologna, sweet barbecue sauce, and crunchy mustard slaw on a soft bun for the ultimate Southern comfort food sandwich. It's an easy charcoal-grilled recipe packed with classic barbecue flavor.

Ingredients

  • 2 lb bologna chub

  • Yellow mustard

  • 2–3 tbsp Heath Riles BBQ Sweet BBQ Rub

  • ½ cup Heath Riles BBQ Sweet BBQ Sauce

  • 6–8 hamburger buns

  • 2 cups Tangy Mustard Coleslaw

Directions

  1. Preheat a two-zone charcoal grill, banking the coals to one side.

  2. Slice the bologna into thick sandwich slices and lightly coat both sides with yellow mustard.

  3. Season all sides with Sweet BBQ Rub.

  4. Place the bologna on the cool side of the grill and cook indirectly for about 30 minutes.

  5. Move the slices over direct heat and sear for 2–3 minutes per side until lightly charred.

  6. Brush both sides with Sweet BBQ Sauce and cook just long enough for the sauce to set.

  7. Place the grilled bologna on hamburger buns and top with Tangy Mustard Coleslaw.

  8. Finish with a drizzle of Sweet BBQ Sauce and serve immediately.
