Buttery Buffalo Wings | Heath Riles BBQ
Buffalo wings have been a fan favorite since the 1960s and are a common entrée at football parties, sports bars, and backyard barbecues. They’re easy to eat and combine juicy meat with crisp skin, making them a treat for all the senses! I love Buffalo wings because there are so many ways to customize them. For example, cooking them on a drum smoker gives them a rich depth that’s entirely different from pellet smokers. Play around with this recipe by adding a dash of cayenne pepper, adjusting the seasoning amounts, and adding different garnishes. I can’t wait to see what you come up with!
The Ingredients
- Chicken wings. I prefer using whole chicken wings for my recipes and butchering them into smaller pieces. This saves a buck and gives you drummies for those who prefer that cut. I prefer my wings “super trimmed,” so I remove any pockets of fat and thick skin.
- Heath Riles BBQ Chicken Rub. This proprietary blend of herbs enhances poultry without overpowering its natural flavor. You can use it on geese, pheasant, turkey, or in non-poultry recipes.
- Heath Riles BBQ Buffalo Seasoning. This zesty blend is for more than just barbecue. It can enhance your favorite roasted veggies, eggs, casseroles, salad dressings, and popcorn! With a conveniently sized shaker, you can bring a pop of bold flavor wherever you go.
- Sauce. I made a simple homemade Buffalo sauce by combining butter and Heath Riles BBQ Buffalo Seasoning until smooth. This created a mild sauce with that traditional buffalo flavor everyone knows and loves.
The Smoker Setup

- Pellet grill/smoker. I smoked these Buttery Buffalo Wings on the Recteq 700. This pit is fairly new to me, but it works like a charm! Charcoal. Today’s cook used Royal Oak Charcoal Hardwood Pellets. If you want a charcoal pellet that uses pure ingredients, give Royal Oak a try. These pellets burn hot and fast and are perfect for smoking the perfect burger, rack of ribs, or platter of wings. Grab a bag from your local big box store to see for yourself.
The Process for Making Buttery Buffalo Wings
- Fire up the grill. I stoked the Recteq 700 with Royal Oak Charcoal Hardwood Pellets and fired it up to 400℉.
- Season the wings. I removed the wings from their packaging and cut them into drummies and flats. Then, I sprayed the meat with a thick layer of duck fat spray. This gives the seasonings something to stick to without altering the flavor of the poultry. Then, I placed the wings in a bowl and seasoned them with Heath Riles BBQ Chicken Rub and Heath Riles BBQ Buffalo Seasoning.
- Start smoking. I laid the Buttery Buffalo Wings directly on the Recteq 700 and topped them with a little more Heath Riles BBQ Buffalo Seasoning. Then, I shut the grill’s lid and let the wings go for 20 minutes, then flipped them and let them go for 20 more minutes.
- Make the sauce. I made homemade Buffalo sauce by placing a stick of butter and Heath Riles BBQ Buffalo Seasoning in a small cast-iron pan. Then, I set the sauce on the Recteq 700 to melt.
- Baste the wings. Once the Buffalo sauce melted, I used it to baste the wings on both sides. I let the wings cook for a few minutes to get a little char, then removed them from the pit. The only thing left was to plate them up!
The Results
The Buttery Buffalo Wings came off the pit with a gorgeous color accented by the perfect amount of char. Each bite was drenched with a mild, succulent Buffalo sauce that featured savory herbs. Just wait until you try this wing!
