We used thick-cut chops, a killer combo of rubs, and finished it off with a homemade chipotle peach glaze that takes it over the top.

Pork and peaches go hand-in-hand, and when you throw smoky chipotle into the mix, you’ve got something special. These pork chops are bold, balanced, and loaded with flavor. Thick, porterhouse-style cuts make this feel like a steakhouse dish—but it’s easy enough to throw together on a weekend afternoon.

The Ingredients

Here’s what we used to season and glaze our pork chops:

  • Thick-Cut Pork Chops - We asked our butcher for 2-inch thick porterhouse-style pork chops. These give you both the loin and tenderloin, just like a beef porterhouse.
  • BBQ Bob's Chipotle Garlic Butter Seasoning - Bob's seasoning blend is based on a salt, pepper, garlic, and butter combo with smoky chipotle heat. It's perfect for building flavor.
  • Heath Riles BBQ Peach Rub - A sweet rub with just the right amount of fruitiness. It balances out the heat form the chipotle and gives a nice crust.
  • BBQ Bob's Peaches & Brown Sugar BBQ Sauce - One of our favorites - sweet, tangy, and smooth.
  • Chipotle Peppers in Adobo - These give our glaze a deep, smoky kick.
  • Cilantro Lime Crema - A quick drizzle of crema over the top adds a cool contrast and ties the dish together. 
  • Fresh cilantro - Optional, for garnish.

The Process for Making Peach Chipotle Pork Chops

You can watch the full video of Bob and me making these pork chops together, but here’s the step-by-step breakdown:

1. Season the Chops

We started by seasoning the pork chops with a generous layer of BBQ Bob’s Chipotle Garlic Butter seasoning. Then we followed it up with Heath Riles BBQ Peach Rub, making sure to coat every side—including the edges. These are thick cuts, so don’t be afraid to season heavily.

  • Tip: Roll the chops through the leftover seasoning on the cutting board to catch every last bit of flavor.

2. Prep the Grill

We fired up the Weber Kettle 22" with a two-zone setup—hot coals on one side, cooler zone on the other. This setup lets you get a hard sear before moving the meat to finish low and slow.

3. Sear and Cook

We placed the chops over direct heat and seared them for about 1½–2 minutes per side to get a golden crust. Then, we moved them to the cooler side and cooked them until they reached an internal temperature of 138°F, letting carryover heat bring them to a perfect 145°F.

4. Make the Glaze

While the chops cooked, we whipped up our Peach Chipotle Glaze. In a blender, we combined:

Blend it until smooth. It’s sweet, spicy, and exactly what these pork chops needed.

5. Glaze and Finish

We brushed the glaze onto the chops during the final minutes of cooking and let it set over indirect heat. Pull the lid over the meat to keep the heat circulating and help the glaze stick.

6. Plate It Up

Once the chops were off the grill, we plated them with a drizzle of cilantro lime crema. This step is optional, but it adds brightness and balances the chipotle heat.

The Results

These chops turned out incredible. The peach rub brought sweetness, the chipotle added depth and smoky heat, and the crema gave each bite a creamy, fresh finish. The bark was flavorful, and the interior stayed juicy and tender. We were already thinking about glazing a pork loin with the same combo—it’s that good.
