These Smoked Chicken Bombs are stuffed with a creamy jalapeño cheese filling, wrapped in bacon, and smoked low and slow until the bacon is perfectly rendered. Finished with a buttery sweet-heat glaze, they’re the ultimate crowd-pleasing BBQ appetizer.

Smoked Chicken Bombs w/ Breanna Stark of Married to BBQ

Ingredients

    • 4 boneless, skinless chicken breasts

    • 16 oz cream cheese, softened

    • 6–8 oz shredded cheese

    • ½ cup diced pickled jalapeños

    • 1–2 tbsp jalapeño juice (from the jar)

    • 2 tbsp Heath Riles BBQ Competition BBQ Rub (plus more for seasoning chicken)

    • 24 slices regular-cut bacon

    • Toothpicks

    • ½ cup Heath Riles BBQ Competition BBQ Sauce

    • ¼ cup Heath Riles BBQ Cherry Apple Habanero BBQ Glaze

    • 1 tbsp Heath Riles BBQ Competition BBQ Rub

    Directions

    1. In a bowl, mix cream cheese, shredded cheese, jalapeños, jalapeño juice, and Competition Rub until combined.

    2. Butterfly chicken breasts and pound thin until even.

    3. Season both sides of chicken lightly with Competition Rub.

    4. Add filling to the center of each breast and roll tightly.

    5. Wrap each chicken roll with 3 slices of bacon and secure with toothpicks.

    6. Smoke at 250°F for 3–4 hours, until bacon is rendered and chicken is cooked through.

    7. In a sauce pot, melt butter and mix in BBQ Sauce, Cherry Apple Habanero Glaze, and Competition Rub. Warm on smoker.

    8. Brush chicken bombs with glaze and cook 15 more minutes to set.

    9. Rest 10–15 minutes, remove toothpicks, slice into medallions, and serve.
