I saw this simple dessert online the other day and knew I had to give it a try. It doesn’t get much easier than cream cheese, chocolate, marshmallow fluff, and graham crackers, but after a little time on the smoker, it all melts together into one heck of a dessert.
We’re taking a whole block of cream cheese, topping it with a Hershey’s chocolate bar and plenty of marshmallow fluff, then putting it on the Weber Searwood at 250°F until everything gets nice and gooey. A quick hit with a kitchen torch gives the marshmallow topping that toasted s’mores finish, and then all you need is a stack of honey graham crackers to start dipping.
Smoked S’mores Cream Cheese Dip | Heath Riles BBQ
This is about as simple as a smoked dessert gets. There’s no complicated prep, no mixing, and only a handful of ingredients.
The cream cheese gives you a rich, creamy base, the Hershey’s chocolate melts over the top, and the marshmallow fluff turns soft and gooey as everything warms up on the smoker. Then we toast the top at the end and serve the whole thing warm with honey graham crackers.
If you need an easy dessert for a backyard cookout, game day, or anytime you already have the pellet grill running, this is one worth trying.
Why This Recipe Works
The biggest thing this recipe has going for it is how simple it is. Everything gets layered right onto one block of cream cheese, so there’s almost no prep involved.
Cooking it low at 250°F gives the cream cheese, chocolate, and marshmallow fluff time to warm and soften together without making things complicated. I cooked mine on the Weber Searwood with Royal Oak Charcoal & Hickory Blended Pellets.
The finishing touch is hitting the marshmallow fluff with a kitchen torch. That gives the top some caramelization and brings in that toasted marshmallow flavor you expect from a s’more.
The Ingredients
- Cream Cheese. Start with one whole block of cream cheese. There’s no need to soften or mix it beforehand—it goes straight onto the prepared pan.
- Hershey’s Chocolate Bar. I used one plain Hershey’s chocolate bar with no almonds or anything added. Lay the whole thing right on top of the cream cheese.
- Marshmallow Fluff. Spread marshmallow fluff over the chocolate bar. This becomes our gooey marshmallow layer as the dip cooks.
- Honey Graham Crackers. These are our dippers and give you that final piece of the classic s’mores combination.
- Chocolate Chips. These are completely optional. I added a few after cooking mainly for looks, but you could also put them on before the dip goes onto the smoker.
Smoker Setup
Fire up the Weber Searwood to 250°F. I’m using Royal Oak Charcoal & Hickory Blended Pellets for this cook.
Once the smoker has come up to temperature, the entire sheet pan will go right in the center of the rack. From there, all we’re doing is letting everything warm up until the chocolate, marshmallow fluff, and cream cheese are nice and gooey.
The Process
Prepare the Pan
Start by lining a sheet pan with aluminum foil. There’s not much to this recipe, and lining the pan makes cleanup even easier once all that chocolate and marshmallow starts melting.
Place one whole block of cream cheese in the center of the foil-lined pan.
Add the Chocolate
Take one plain Hershey’s chocolate bar and lay it directly on top of the block of cream cheese. You don’t need to chop it up or melt it beforehand. The heat from the smoker is going to take care of that for us.
Top with Marshmallow Fluff
Spoon marshmallow fluff over the Hershey’s bar, covering the top with a good layer. It doesn’t have to look perfect going onto the smoker because everything is going to soften and melt together as it heats.
At this point, you’ve already got all three main parts of a s’more together: the creamy base, chocolate, and marshmallow. The graham crackers come in when it’s time to eat.
Smoke the S’mores Cream Cheese
Place the prepared pan in the center of the Weber Searwood running at 250°F.
Let it cook until everything is warm, gooey, and melted. There wasn’t a specific cook time given for this one, so watch the texture rather than the clock. You’re looking for softened cream cheese, melted chocolate, and warm marshmallow fluff that’s ready for dipping.
Toast the Marshmallow
Once the s’mores cream cheese is off the smoker, grab a kitchen torch and lightly toast the marshmallow fluff on top.
You’re just looking to add some caramelization here, so work your way across the surface until you have that toasted marshmallow look you want.
If you want, sprinkle a few chocolate chips over the top for presentation. They’re completely optional, and you can also add them before smoking if you’d rather have them melted into the dip.
Serve with Graham Crackers
Now there’s only one thing left to do. Grab some honey graham crackers and get in there.
Serve the Smoked S’mores Cream Cheese warm so you get the creamy cheese, melted Hershey’s chocolate, toasted marshmallow fluff, and crunchy graham cracker all in the same bite. It’s simple, gooey, and good.
The Results
This one is about as easy as dessert gets, and it turned out good. The cream cheese gets soft and creamy, the Hershey’s chocolate melts right into it, and the marshmallow fluff gives you that gooey s’mores topping.
Hitting the marshmallow with a kitchen torch at the end gives you a little caramelization on top and really finishes off that classic s’mores flavor. Scoop everything up with a honey graham cracker, and you get creamy, chocolatey, gooey, and crunchy all in one bite.
I’m telling y’all, this is good.
Perfect Pairings
This Smoked S’mores Cream Cheese Dip makes an easy dessert to throw on the smoker after a backyard BBQ or game-day meal. Keep the main course simple, then bring this out while everybody’s still hanging around.
- Smash Burgers. A classic burger followed by warm s’mores dip makes for an easy backyard cookout menu.
-
Pepper Jack-Stuffed, Bacon-Wrapped, BBQ-Glazed Brats. These loaded brats bring plenty of savory flavor before you finish the meal with something sweet.
Storing Leftovers
If you happen to have any left, let the Smoked S’mores Cream Cheese Dip cool before transferring it to an airtight container and storing it in the refrigerator.
Keep the graham crackers separate so they stay crisp. When you’re ready for more, gently reheat the dip until the cream cheese and chocolate are warm and soft again, then serve with fresh graham crackers.
Tips for the Best Smoked S’mores Cream Cheese Dip
- Line your pan with foil. Using aluminum foil makes cleanup a whole lot easier once the chocolate and marshmallow start melting.
- Use a plain chocolate bar. I kept this one classic with a plain Hershey’s chocolate bar without almonds or anything else added.
- Watch the texture instead of the clock. There wasn’t an exact cook time for this recipe. Keep the Weber Searwood at 250°F and cook until everything is warm, gooey, and melted.
- Don't overdo it with the torch. The kitchen torch is just there to give the marshmallow fluff a little caramelization. Keep it moving across the surface until you get the color you like.
- Chocolate chips are optional. Sprinkle a few over the finished dip if you want to dress it up. You can also add them before smoking if you want them melted.
- Serve it warm. This dip is at its best while the chocolate and marshmallow are still warm and gooey, so have your honey graham crackers ready to go.
Final Thoughts
Sometimes the simple recipes are the ones you end up making again and again. This Smoked S’mores Cream Cheese Dip only takes a handful of ingredients, and there’s almost no prep involved.
All you have to do is stack a Hershey’s chocolate bar and marshmallow fluff over a block of cream cheese, put it on the Weber Searwood at 250°F, and let everything get warm and gooey. Hit the marshmallow with a torch when it comes off, grab some honey graham crackers, and dessert is ready.
Whether you make it for game day, a backyard cookout, or just because you want something sweet off the smoker, give this one a try. I’m telling y’all, it’s good.
