This creamy, Southern-style potato salad is loaded with tangy mustard, rich mayo, bold BBQ seasoning, and classic mix-ins like eggs and relish. It’s the perfect crowd-pleasing side for any cookout, holiday, or family gathering.

Classic Southern Potato Salad

Ingredients

  • 6 russet potatoes, peeled and diced

  • 6 hard-boiled eggs, yolks mashed and whites chopped

  • 1–1¼ cups mayonnaise

  • 5 tablespoons mustard (yellow, Dijon, or spicy brown)

  • ¾ cup pickle relish (sweet, dill, or Wickles)

  • ¾ red onion, finely chopped

  • 1 tablespoon chicken bouillon (for boiling water)

  • 1 tablespoon Heath Riles BBQ Everyday Rub

  • Dash of paprika (plus more for garnish)

  • Dash of Heath Riles BBQ Garlic Jalapeño Rub (optional)

  • Salt and pepper to taste (optional)

Directions

  1. Add peeled and diced potatoes to a pot with water and chicken bouillon. Boil until fork-tender, then drain and cool slightly.

  2. Mash egg yolks and chop the whites. In a large mixing bowl, combine eggs with mayo, mustard, relish, onion, and seasonings.

  3. Gently fold in the potatoes until evenly coated. Adjust seasoning to taste.

  4. Serve warm or chill for at least 30 minutes. Garnish with paprika before serving.
