This Easy Roasted Holiday Pork Loin is a budget-friendly showstopper cooked low and slow with fresh herbs, bright citrus seasoning, and clean hickory smoke. It delivers tender, juicy slices with minimal prep and big holiday flavor.

Easy Holiday Pork Loin

Ingredients

  • 1 pork loin (5 pounds)
  • 1 teaspoon fresh rosemary
  • 1 teaspoon fresh thyme
  • 1 teaspoon fresh oregano
  • 2–3 tablespoons Heath Riles Simple Citrus Rub

Directions

  1. Preheat the pellet grill to 275°F using hickory-blended pellets.

  2. Score the fat cap of the pork loin in shallow diagonal lines and pat dry.
  3. Mix rosemary, thyme, oregano, and Simple Citrus Rub; season the loin thoroughly on all sides.
  4. Place the loin fat-side down on the grill and cook for 45 minutes.
  5. Flip the loin fat-side up and continue cooking until internal temperature reaches 139–140°F.
  6. Remove from the grill, tent with foil, and rest for 20 minutes before slicing.
