These Grilled Mahi Mahi Fish Tacos feature flaky Cajun-seasoned mahi, sweet pineapple slaw, and a creamy lemon taco sauce for an easy meal that's perfect any night of the week.

Grilled Mahi Mahi Fish Tacos with Pineapple Slaw

Ingredients

    • 14-ounce bag coleslaw mix

    • ¼ red onion, thinly sliced

    • ½ cup olive oil

    • ¼ cup apple cider vinegar

    • ¼ cup Heath Riles BBQ Pineapple Habanero Glaze

    • 1–2 tablespoons Heath Riles BBQ Cajun Creole Garlic Butter Rub

    • 1 tablespoon olive oil

    • 2 tablespoons Heath Riles BBQ Cajun Creole Garlic Butter Rub

    • ½ cup mayonnaise

    • Juice of ½ lemon

    • Crystal Hot Sauce, to taste

    • Flour tortillas

    • Lime wedges (optional)

    Directions

    1. In a large bowl, whisk together the olive oil, apple cider vinegar, Pineapple Habanero Glaze, and Cajun Creole Garlic Butter Rub.

    2. Add the coleslaw mix and sliced red onion, then toss until evenly coated. Refrigerate for 1 hour.

    3. Preheat your grill to medium-high heat.

    4. Lightly coat the mahi mahi with olive oil and season both sides generously with Cajun Creole Garlic Butter Rub.

    5. Warm the tortillas on the grill until lightly toasted, then keep them warm in a tortilla warmer.

    6. Grill the mahi mahi until it flakes easily and reaches an internal temperature of 145°F.

    7. While the fish cooks, mix together the mayonnaise, lemon juice, and Crystal Hot Sauce to make the taco sauce.

    8. Flake or slice the cooked mahi into bite-sized pieces.

    9. Fill each warm tortilla with grilled mahi, pineapple slaw, and a drizzle of taco sauce.

    10. Serve immediately with lime wedges, if desired.
