How to Make Simple Pico de Gallo and Guacamole | Heath Riles BBQ

Many people shy away from making their own Pico de Gallo and Guacamole because they think it’s too hard. While it’s true that store-bought condiments have their place, often, you’re sacrificing flavor for convenience. Learning How to Make Simple Pico de Gallo and Guacamole will save you money and a trip to the store. Without further ado, here’s how I create my Tex-Mex-inspired side dishes. 

Ingredients

Here’s what you need to make Simple Pico de Gallo and Guacamole

  • Veggies and herbs. For these recipes, I used onion, tomato, and cilantro. Using my multifunctional 13 in 1 chopper made chopping uniform veggies a breeze! This mixture is used for both the Pico de Gallo and Simple Guacamole. 
  • Heath Riles BBQ Simple Citrus Rub. If you like seasoning your food with bright citrus, you’ll love this rub. It tastes great on seafood, steak, veggies, Pico de Gallo, and Guacamole. 
  • Heath Riles BBQ Garlic Jalapeño Rub. This rub is my bestseller, and it’s easy to see why. You can't go wrong with a blend of spicy peppers, garlic, salt, and pepper! Use it on popcorn, vegetables, casseroles, wings, pizza, and more.
  • Limes. Did you know adding fresh lime juice to your avocado can keep your guacamole green? It’s true! Plus, it gives the side dishes a hint of authentic flavor. 
  • Cumin. A dash of cumin can elevate your Simple Pico de Gallo and Guacamole. Its deep, earthy flavor brings out the freshness of the citrus, herbs, and veggies. 

The Process for Making Pico de Gallo 

You’ll find a detailed demonstration of this recipe within the video and recipe card. Here’s a quick rundown of how I made this easy Pico de Gallo. 

  • Prep the Pico de Gallo ingredients. I quartered the onion and halved, quartered, and de-seeded the Roma tomatoes. Then, I put the onion, Roma tomatoes, and cilantro through my multifunctional 13 in 1 chopper
  • Assemble the Pico de Gallo. I transferred the veggie and herb mixture to a large bowl and stirred to combine. Then, I squeezed fresh lime juice over the top and added a dash of Heath Riles BBQ Simple Citrus Rub and Heath Riles BBQ Garlic Jalapeño Rub. I stirred in some pickled jalapeńos and ¼ teaspoon of cumin. I set the bowl to the side to let the flavors mesh.

The Process for Making Guacamole

  • Prep the Simple Guacamole ingredients. I halved the avocados, removed the pit, sliced it, and set it in the bowl. Be sure to watch the video to learn my easy hack for slicing avocados while they’re still in the peel! Then, I added the juice of half a lime to keep the avocado from browning.
  • Assemble the Guacamole. I stirred in three large scoops of the simple pico de gallo I had just made, saving me time and effort. I roughly mashed the mixture, leaving some large chunks of avocado. To finish the Simple Guacamole, I added a dash of Heath Riles BBQ Simple Citrus Rub, Heath Riles BBQ Garlic Jalapeño Rub, and cumin
