There are a million ways to eat a steak, but this Old School Ribeye Steak Sandwich is one of the best. This recipe will give you a sense of nostalgia, reminding you of lunches at a vintage diner.

Old School Ribeye Steak Sandwich on the Flatrock Flat Top Grill

Ingredients

  • Thin-sliced ribeye steaks

  • Bear & Burton’s W Sauce - Fireshire

  • Heath Riles BBQ Beef Rub

  • 1 onion, sliced

  • 1 bell pepper, sliced

  • Texas Toast

  • Tuffy Stone’s Steak Night Rub

  • Sliced provolone cheese

  • ½ cup mayonnaise

  • 2 teaspoons creamy horseradish

  • 1 teaspoon Bear & Burton’s W Sauce

  • 1 teaspoon Heath Riles BBQ Beef Rub, to taste

Directions

  1. Fire up the Traeger Flatrock Flat Top Grill or your griddle pit of choice to a medium temperature.

  2. Remove the thinly sliced ribeye steaks from their packaging and trim the excess fat.

  3. Place the trimmed steaks in a large Ziploc bag and add Bear & Burton’s W Sauce - Fireshire and Heath Riles BBQ Beef Rub. Seal the bag and shake it to coat the meat. Let the meat marinade in the fridge while you prep the vegetables.

  4. Thinly slice the onions and peppers.

  5. To make the horseradish mayonnaise, combine the mayonnaise, horseradish, Bear & Burton’s W Sauce, and Heath Riles BBQ Beef Rub in a small bowl.

  6. Grease the Traeger Flatrock Flat Top Grill with a little butter, then lay down the sliced onions and peppers. Season the veggies with Heath Riles BBQ Beef Rub and let them cook until translucent, adding a dash of Bear & Burton’s W Sauce to give them another layer of flavor. While the veggies cook, toast the Texas Toast on both sides.

  7. Once the veggies are soft, move them to low heat and lay down the thinly sliced ribeye steaks. Season the meat with a dash of Tuffy Stone’s Steak Night Rub and let it cook until it starts browning. Top each steak with peppers, onions, and a slice of provolone cheese. Shut the Traeger Flatrock Flat Top Grill lid and let the steaks sear for a few minutes until the cheese is melted.

  8. To assemble the sandwiches, lay down two pieces of Texas toast and top them with a dollop of horseradish mayonnaise. Slide the ribeye steak, veggies, and cheese on one piece of bread, then top it with the other slice of bread. Enjoy!
