I cooked these sammies on the Weber Kettle Grill, giving them the perfect amount of char. I packed the sandwiches with spicy Worcestershire sauce, Buffalo seasoning, and my signature Chicken Rub. 

This meal is one for the records, topped with creamy mayonnaise, tangy pickles, and gooey Provolone. Each bite delivers just the right amount of heat, herbs, and hearty toppings. The sandwiches came together in less than 20 minutes, making them great for busy nights at the ball field or a poolside dinner. Buffalo Chicken Sandwich | Heath Riles BBQ

I love cooking Buffalo wings on the Weber Kettle Grill, so I knew this Buffalo Chicken Sandwich would be a slam dunk. This pit gives the chicken a rich, smoky depth, which adds to the spicy pepper notes. Thinly sliced chicken allows the marinade to seep in and reduces cooking time. You can customize this recipe to fit your tastes. Add a dash of blue cheese or ranch dressing, or switch up the cheese. Whatever way you build it, this Buffalo Chicken Sandwich is bound to make everyone’s tail wag. 

The Ingredients

Here are the ingredients you need to make a Buffalo Chicken Sandwich that everyone will rave about. 

• Chicken breast. I used thinly sliced chicken breast from my local grocery store. This cut of meat gives you all the best flavors of chicken without having to wait all day for your sandwich to cook. 

• Bear & Burton’s W Sauce - Fireshire. This tasty Worcestershire sauce was a happy accident that occurred when my buddies added one too many hot peppers to their original W Sauce recipe. The result was a mouthwatering sauce with a kick of heat. I know you’ll love adding it to dressings, sandwiches, and ribs. 

• Heath Riles BBQ Chicken Rub. My Chicken Rub is perfect for all types of poultry. Its proprietary herb blend enhances the bird’s natural flavor. You can also add it to veggies, rice, and more. 

• Heath Riles BBQ Buffalo Seasoning. This tasty Buffalo seasoning is for more than just BBQ. You can add a dash to popcorn, pasta, french fries, and casseroles. 

• Sandwich fixings. My sandwich included toasted potato buns, Provolone cheese, mayonnaise, and pickles. This classic combination is perfect for chicken sandwiches and is inspired by popular fast-food chains. 

The Smoker Setup

Here’s the main equipment I used for this recipe. The Equipment and Tools section contains more of my grilling favorites. 

• Kettle Grill. My Buffalo Chicken Sandwich was smoked to perfection on the Weber Kettle Grill. This pit is perfectly portable, easy to use, and customizable. If you’re looking for a fun Weber accessory, try the Vortex Chimney, a must for two-zone fires. 

• Charcoal. I stoked the pit with Royal Oak Charcoal Super-Sized Briquettes and Royal Oak Tumbleweeds, a wonderful combination for smoking chicken, ribs, burgers, and steak. Royal Oak Charcoal contains no fillers and is an easily accessible option. 

The Process for Making a Buffalo Chicken Sandwich

Check out the video and recipe card for a detailed demonstration. For now, here’s how this delicious Buffalo Chicken Sandwich came together. 

• Fire up the grill. I stoked the Weber Kettle Grill with Royal Oak Charcoal Super-Sized Briquettes and Royal Oak Tumbleweeds and fired it up to 475℉, creating a two-zone fire.

• Marinate the meat. I removed the thinly sliced chicken breasts from their packaging and placed them in a large bowl. I drizzled Bear & Burton’s W Sauce - Fireshire and sprinkled Heath Riles BBQ Chicken Rub over the chicken, then let it marinate in the fridge for an hour. 

• Start cooking. I laid the chicken on a baking tray and sprinkled it with Heath Riles BBQ Buffalo Seasoning. Then, I set the chicken directly on the hot zone of the Weber Kettle Grill and let it cook until it reached 165℉ internally, flipping it halfway through. This took 7-8 minutes. 

• Assemble the Buffalo Chicken Sandwiches. I laid hamburger buns on the pit and toasted them until golden brown. Then, I added provolone cheese on top of each chicken breast and shut the grill’s lid to let the cheese melt. I took the meat off the grill and built my Buffalo Chicken Sandwich by spreading mayonnaise on my hamburger bun, then topped it with the buffalo chicken patty and cheese. I garnished the sandwich with pickles and topped it with the other bun half. All that was left was to dig in! 

The Results

Storing Leftovers

You can store leftover chicken patties in the fridge for up to four days or freeze them for up to four months. I recommend freezing/refrigerating just the patties, as the buns can become soggy otherwise.
