This Cajun Crawfish Queso is a smoky, cheesy dip loaded with bold Southern flavor from crawfish tails, peppers, and our signature seasoning blends. It’s the perfect crowd-pleasing appetizer for game day, backyard cookouts, or any time you’re craving comfort with a kick.

Ingredients

  • 1 block Velveeta cheese
  • 1 lb Monterey Jack cheese, cubed
  • 1 can Rotel (any vareity)
  • 1 small white onion, diced
  • ½ green bell pepper, diced
  • 12 oz Louisiana crawfish tails
  • Heath Riles BBQ Cajun Creole Garlic Butter Rub
  • Heath Riles BBQ Beef Rub
  • Splash of water or milk (to thin queso)
  • Optional: green onions, sliced for garnish
  • Tortilla chips for serving

Directions

  1. In a large foil pan, combine the Velveeta (cut into cubes) and Monterey Jack cheese. Add minced garlic, the entire can of Rotel, diced onion, diced green bell pepper, and crawfish tails.

  2. Add 2 tablespoons of Heath Riles Cajun Creole Garlic Butter Rub and a tablespoon of Heath Riles BBQ Beef Rub to the mix. Stir slightly to distribute ingredients.

  3. Pour in a splash of water or milk to help loosen the queso as it cooks and keep it from getting too thick.

  4. Preheat your pellet grill (we used a Smokin’ Brothers Grill) to 300ºF using Royal Oak Hickory-Infused Charcoal Pellets.

  5. Place the foil pan in the center of the grill. Let it cook for about 1 hour, then give it a good stir to help the cheese melt evenly.

  6. Continue cooking the queso for another 1 to 1.5 hours, stirring occasionally, until the cheese is fully melted and the veggies are soft. Total cook time should be around 2 to 2.5 hours.

  7. Remove the pan from the grill, garnish with sliced green onions (optional), and serve hot with tortilla chips.
