My Viral Boat Dip is an excellent alternative to more involved Tex-Mex appetizers. It’s a fabulous treat for those scorching hot days when cooking isn’t an option. Because it lasts a few days in the fridge, you can take it on long drives or camping trips.
The most minimal recipes become extraordinary with the right seasonings. This dip uses Malcolm's Grande Gringo Mexican Seasoning to add just the right South-of-the-border kick. To give the Viral Boat Dip a little spice, I added Heath Riles BBQ Garlic Jalapeño Rub. When paired, you have one fantastic taco seasoning that can be used in any Tex-Mex recipe. Feel free to adjust the seasonings to fit your personal preference.

- Malcolm's Grande Gringo Mexican Seasoning. This excellent seasoning comes from a good buddy of mine, Malcolm Reed, from How to BBQ Right. It contains a blend of cumin, salt, garlic, paprika, and oregano. Use it in your tacos, burritos, and nachos or to rim your margarita glass. Unlike other Mexican seasonings, Malcolm’s is mild, so the entire family can enjoy it!
- Heath Riles BBQ Garlic Jalapeño Rub. This zesty mix of jalapeños, garlic, salt, and pepper has been a best-seller since day 1. Once you snag a bottle, you’ll see why! This is an AP rub with a kick, perfect for veggies, popcorn, chicken, pork, or steak.
- Mexican-style finely shredded cheese. A little cheese takes this Viral Boat Dip up a notch. I used a Mexican-style cheese blend. I prefer the finely shredded variety, but you can use whatever you like. If you’re not in a hurry, go for freshly shredded cheese. Delicious!

- Mix the ingredients. First, I placed the sour cream, Rotel, lime juice, Malcolm Reed’s Grande Gringo Mexican Seasoning, Heath Riles BBQ Garlic Jalapeño Rub, and shredded cheese in a large bowl. I mixed the Viral Boat Dip until it was homogenous. The only thing left to do was dig in!
