When I cook a brisket, I usually use a 10-pound or bigger cut of meat. Now, if I’m having a party or going to a tailgate, I won’t have any left. Sometimes, though, I’ll make a brisket for a small group or just the family and there’ll be some leftovers.
This happened a while back, and I decided to make some brisket sandwiches with my leftovers. These were so easy I had them ready in minutes.
Let’s dive into brisket sandwich-making right now!
The big work was already done by making the brisket in the first place. This recipe is so easy you don’t need anything but a knife, the ingredients, and your fingers.
I walked through this recipe from beginning to end on my Youtube video and I also included the directions for my chopped brisket sandwiches at the bottom of this post.
Here’s how I made them.
I think I’ll rename this bad boy the Ultimate Chopped Brisket Sandwich. I bit into it and tasted all the flavors of the spices and the crunch of the pickles and onion….man it was delicious!
The chopped brisket was juicy and tender, perfect on a sandwich. The next time I make them, I’ll add some sides to go with them, like Smoked Brisket Baked Beans and coleslaw. I’m already looking forward to eating these again.
I like my sandwiches piled high, so I probably used 6-8 ounces of meat on every bun. One sandwich makes a meal for most people unless they’re really hungry. If you make a side dish or two, one sandwich should fill everyone up.
I didn’t need many tools for this recipe.

Take your leftover brisket out of your fridge or freezer. We vacuum sealed our brisket and heat it back up in the bag.
Slice your brisket and chop the slices into small pieces.
Assemble your sandwich. Take about a handful of your chopped brisket and place it on your bottom bun. Drizzle some Heath Riles BBQ Sweet BBQ sauce over your chopped brisket, and place your sliced onion and pickle chips on top.
Once you have your sandwich assembled, it's time to dig in!
