This side-by-side rib cook compares properly cooked baby back ribs against fall-off-the-bone ribs to show how just 30 extra minutes in foil changes texture, bark, moisture, and overall bite. Perfect for backyard pitmasters wanting to improve rib texture and timing.

Ingredients

  • 4 racks baby back ribs

  • 2–3 tbsp Heath Riles BBQ Garlic Jalapeño Rub

  • 2–3 tbsp Heath Riles BBQ Competition Rub

  • Apple juice

Directions

  1. Trim baby back ribs competition-style and mark two racks with a small slit between the first bone for identification.

  2. Season all ribs with Heath Riles BBQ Garlic Jalapeño Rub, followed by Heath Riles BBQ Competition Rub.

  3. Preheat your Yoder YS640 Pellet Grill to 300°F using Royal Oak Hickory Blended Charcoal Pellets.

  4. Smoke ribs unwrapped for 2 hours, spritzing lightly after the first hour using a Spray Bottle.

  5. Wrap ribs in Aluminum Foil with a small drizzle of apple juice and return to the smoker.

  6. After 1 hour wrapped, remove two racks once they bend and slightly crack without falling apart.

  7. Leave the remaining two racks wrapped for an additional 30 minutes to create fall-off-the-bone ribs.

  8. Slice and compare the texture, bark, color, and bite between the properly cooked ribs and the overcooked ribs.
