These Pineapple Teriyaki Ribs are a tropical twist on classic BBQ—tender, smoky baby back ribs glazed with a sticky-sweet blend of pineapple, teriyaki, and habanero heat. Perfect for summer cookouts, they deliver bold flavor with just the right balance of sweet, savory, and spice.

Pineapple Teriyaki Ribs on a Camp Chef Pellet Grill

Ingredients

  • 2 slabs baby back ribs, trimmed and membrane removed

  • Heath Riles BBQ Garlic Jalapeño Rub

  • Heath Riles BBQ Honey Chipotle Rub

  • ½ cup Heath Riles Sweet BBQ Sauce

  • ½ cup Heath Riles Pineapple Habanero Glaze

  • 3 tbsp teriyaki glaze (thick-style)

  • 3 tsp brown sugar

  • ½ tsp garlic paste or granulated garlic

  • ½ tsp ginger paste or ground ginger

  • 1 can pineapple juice (use ½ can per slab for wrapping)

  • Heavy-duty aluminum foil

Directions

  1. Preheat your smoker to 275°F using Royal Oak Hickory Charcoal Pellets or similar.

  2. Remove membrane and any excess fat or flap meat from ribs. Pat dry.

  3. Season both sides of the ribs with a generous layer of Garlic Jalapeño Rub followed by Honey Chipotle Rub. Let sweat in for 10 minutes per side.

  4. Place ribs on the smoker and cook unwrapped for 1.5 to 2 hours until good color and bone pullback appear.

  5. In a small bowl, combine Sweet BBQ Sauce, Pineapple Habanero Glaze, teriyaki glaze, brown sugar, garlic, and ginger. Warm gently on the grill or stovetop until combined.

  6. Place ribs meat-side down on double-layered foil in a tray. Pour ½ can of pineapple juice per slab. Wrap tightly and return to smoker.

  7. Continue cooking for 45–60 minutes until ribs are probe-tender (204–206°F internal).

  8. Rest wrapped ribs for 15–20 minutes, then carefully unwrap and glaze both sides with the pineapple teriyaki mixture.

  9. Return to smoker unwrapped for 10–15 minutes to allow the glaze to tack up.

  10. Let rest briefly before slicing between the bones. Serve with your favorite BBQ sides.
