This budget-friendly BBQ recipe turns an affordable chuck roast into tender, smoky burnt ends with rich beef flavor and a sweet, caramelized finish. Perfect for weeknight dinners, game day snacks, or backyard gatherings.

Poor Man Burnt Ends

Ingredients

  • 1 chuck roast (2–3 lbs), well-marbled

  • 1–2 tbsp olive oil (or binder of choice: mustard, mayo, etc.)

  • 2 tbsp Heath Riles BBQ Beef Rub

  • 1.5 tbsp Heath Riles BBQ Competition BBQ Rub

  • 1.5 tbsp Worcestershire sauce

  • ¼ cup Heath Riles BBQ Sweet BBQ Sauce (plus more for glazing)

  • 1–1¼ cups beef broth

  • ½ stick unsalted butter, cut into pats

Directions

  1. Trim excess hard fat from the chuck roast and cut into 1”–1.5” cubes.

  2. Drizzle cubes with olive oil. Toss to coat, then season generously with Beef Rub followed by Competition BBQ Rub.

  3. Preheat smoker to 300ºF using Royal Oak Charcoal Hickory Blend Pellets. Place cubes directly on the grates or a cooling rack. Smoke for 1 hour 15 minutes, or until deep mahogany color and bark forms.

  4. In a bowl, mix Worcestershire sauce, ¼ cup Heath Riles BBQ Sweet BBQ sauce, beef broth, and butter pats.

  5. Transfer burnt ends to a foil pan. Pour the braising liquid over the meat and cover tightly with foil. Return to the smoker and cook for 1 hour, checking tenderness. Cook an additional 20 minutes if needed.

  6. Drain excess liquid. Toss burnt ends with ~⅓ cup Heath Riles BBQ Sweet BBQ sauce. Return to smoker for 5–10 minutes uncovered to tack up and caramelize.

  7. Let rest briefly and enjoy with your favorite BBQ sides!
